Welcome to my blog! My name is Nadia and I’m thrilled to share my journey with you as I dive into the delicious world of gluten free baking. My name may be unknown, but my passion for baking is immense. In 2012, I received a life changing diagnosis of coeliac disease. At that moment, my relationship with food transformed, and I embarked on a quest to create mouth watering, gluten free treats that could delight anyone, regardless of their dietary restrictions.
The Start of My Gluten Free Journey
Discovering my coeliac diagnosis was both challenging and freeing. It meant saying goodbye to traditional baked goods, but it also opened the door to immense creativity. With a strong desire to enjoy cookies just like everyone else, I started experimenting in my kitchen. My goal? To develop recipes that are not only gluten free but also irresistibly delicious!
Initially, I encountered numerous setbacks. For instance, my first batch of cookies was crumbly and dry. By experimenting, I eventually discovered that using gluten free flour blends with binding agents like eggs and xanthan gum greatly enhanced the texture.
A Taste of What I Offer
After years of testing and refining my recipes, I launched my collection of Gluten Free NYC Cookies in 2023. Each cookie is crafted with love and packed with flavour. Whether you crave the rich sweetness of Double Chocolate or the unique charm of Red Velvet, there’s something for everyone. Here are some of my featured flavours:
Matcha Macadamia: A unique blend of earthy matcha and buttery macadamia nuts that create a perfect balance of flavours.
Nutella: Rich, creamy, and utterly indulgent, this cookie has a gooey Nutella centre that melts in your mouth.
Birthday Cake: Every day feels like a celebration with sprinkles, white chocolate chunks and birthday cake flavour goodness that remind you of the happiest moments in life.
Chocolate Chip: A classic favourite loaded with chocolate chunks that never goes out of style!
But wait, there’s more! I also whip up Fudgy Chocolate Brownies that are simply to die for. Packed with chocolate and perfect for sharing, they are a hit at family gatherings. In fact everyone who has tried them so far didn’t realise they were gluten free!
